Food Science and Safety CASE Institute
If you are a middle or high school teacher interested in bringing food science into your classroom, the CASE Institute Food Science and Safety course is for you! Come to Raleigh this summer and get hands-on professional development for facilitating food science lessons in your classroom. Upon completion of this workshop, you’ll be “certified” to teach the Food Science and Safety course developed by CASE and receive the entire curriculum, complete with lessons plans, lab activities, PowerPoint presentations, quizzes, answer keys, assessment rubrics, and more.
In Food Science and Safety, students explore the science behind food through the following areas of study:
- Food Chemistry
- Food Microbiology
- Food Quality and Safety
- Product Development
Who: This course is intended for middle and high school teachers of agricultural curriculum and basic science teachers, such as biology and chemistry.

Location: North Carolina State University, Schaub Hall, Raleigh, North Carolina
Dates: June 21 (5pm) through July 2 (5pm), 2020.
- Plan to arrive at NC State University by 5 pm on Sunday, June 21st, 2020 for your institute orientation. During orientation, you will be provided with a complete schedule for the duration of the institute.
- (M-F) Class starts promptly each day at 8 am and finishes at 5 pm. There will be a one-hour lunch break each day.
- Participants will have homework to complete each evening.
Travel: The Raleigh-Durham International Airport (RDU) is 20 minutes away from campus. Taxi services (e.g. Uber/Lyft) are often the best options for travel between the airport and campus.
Lodging: Lodging will be on campus at the Wolf Village Apartments. Arrangements will be 4-room, 4-person suite-style rooms. Each suite has a small kitchenette with refrigerators. Click here to learn about the amenities. Wolf Village Apartments is a 10 minute walk from Schaub Hall.
Meals: We will provide pre-paid debit cards to give you flexibility in choosing dining options. There are many restaurants and grocery store options on and near campus.
Weekend Off: June 27-28th Participants will have the weekend to explore beautiful North Carolina. Raleigh is located in The Triangle with lots to see in the surrounding area including nearby Durham and Chapel Hill. The city is only a two-hour drive from the Carolina coast and gorgeous beaches, and only four hours from the Blue Ridge Mountains. Each participant will have their room at NC State University reserved for the entire duration of the Institute. All weekend activities (including meals) will be the responsibility of participants.
