Food Product Testing
ph testingThe Department of Food, Bioprocessing and Nutrition Sciences offers laboratory testing for new food products as well as nutritional labeling for your product. Click here for information on how to obtain a nutritional facts panel.

Testing allows us to classify your product according to state and federal regulations and to determine processing requirements for your specific food product.

Acid Foods
Many food products are preserved by their acidity. We classify these products as acid foods or acidified (acid added) foods. This depends on the pH and proportion of individual ingredients and the final equilibrium pH of the product.

Others Types of Foods
Other food products are preserved by alternative means such as dehydration, refrigeration or fermentation.

The evaluation of your product is a two step process:

First: You will need to complete and submit an ONLINE REQUEST FORM with detailed information about your product. We will need a list of ingredients, with quantities, along with your contact information. Do not send any samples until you have been contacted by us.

Second: We will contact you with instructions on specific samples that will need to be mailed to our laboratory and total fees. Please include payment with your samples.

For sauces, marinades and other liquids, we typically will need two samples. One sample is your final product as it is to be sold and another sample with certain ingredients omitted from the formulation. We will do a pH test on these products

For baked or dried products or syrup, we will measure the water activity (Aw) of the product.
