Dairy Processing at the Department of Food, Bioprocessing and Nutrition Sciences is one of most visible (and tastiest!) programs in the extension program. A full-scale dairy plant is on site, providing testing, processing assistance, and training as well as the production of a variety of ice creams - sold year round - but best known for sale at the North Carolina State Fair.
Dairy extension work has been successful in the development of Sweet Acidophilus milk, vitamin fortified milk and fat replacers in low fat ice cream.
